1 ½ lbs. carrots, about 8 medium
2 Tbsp. golden raisins
3 Tbsp. canola or peanut oil
2 onions, sliced
½ tsp. hot red pepper flakes
½ tsp. caraway seeds
½ tsp. paprika
½ tsp. ground cumin
½ tsp. salt
19 oz. can chickpeas, drained and rinsed
1 pinch of cayenne or black pepper
